Pasta with anchovies recipe for 4 people.

Ingredients:

  • 600 gr of anchovies or small anchovies
  • 150 gr of pecorino cheese
  • Chopped parsley
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Salt
  • Black pepper
  • 400 gr of noodles

Preparation:

Let’s start with the anchovies first, cleaning them, removing the head and the bones.
After cleaning the anchovies, fry the garlic and parsley in a pan with a little oil.
Add the anchovies and a pinch of salt and pepper to flavor.
Take half a ladle of the cooking water, where in the meantime you will have boiled the spaghetti, and add it to the anchovy sauce, allowing it to cook until evaporated.
Once ready, drain the spaghetti al dente, toss with the anchovy sauce and a final grated pecorino cheese.
Ready to serve at the table.
